Grease an 8x8 inch baking dish with cooking spray or coconut oil and set aside.
Peel your lemon using a vegetable peeler.
Process the oats, shredded coconut and lemon peel in a food processor until fine.
Add in the remaining ingredients and process until a sticky dough forms. You may have to stop and scrape down the sides of your processor occasionally.
Press the dough down evenly into your prepared baking dish. Let the bars chill in the fridge for about 1 hour before cutting into squares.
Notes
I used oats to make these lower in fat and calories than the usual date bars - and that makes them nut-allergy friendly, too!
