Vegan Apple Cinnamon Baked Doughnuts

These whole grain and coconut sugar sweetened Vegan Apple Cinnamon Baked Doughnuts are speckled with fresh apple pieces and coated in a creamy Cashew Frosting.

Ingredients

  • 1 flax egg 6 tablespoons water + 2 tablespoons [ground flaxseed]
  • 2 cups spelt flour
  • ½ cup coconut sugar
  • 1 ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup non-dairy milk
  • ¼ cup coconut oil melted
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 small apple pealed and finely chopped apple

FROSTING:

  • ¾ cup raw cashews soaked 3 hours or overnight
  • 2 tablespoons coconut oil melted
  • 2 tablespoons pure maple syrup
  • 2 tablespoons non-dairy milk or more to reach your desired consistency
  • pinch sea salt

Instructions

  • Preheat your oven to 350 °F and grease your doughnut pan(s) with coconut oil. Set aside.
  • In a small bowl, prepare your two flax eggs by whisking 2 tablespoons of ground flaxseed with 6 tablespoons of water. Set aside for five minutes to thicken.
  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon and salt.
  • Then add in the wet ingredients, including the two flax eggs and mix until just combined.
  • Fold in the chopped apple.
  • Place the batter in a large zip-lock bag and snip off one corner with some scissors. Pipe the dough into your prepared doughnut pans and smooth out with your finger. You don't want to overfill your doughnut holes, but just fill them to about ¾ fullness.
  • Bake for 12-15 minutes until golden.
  • While the doughnuts are baking, prepare the frosting by draining and rinsing off the soaked cashews and adding them into a blender with the remaining ingredients. Blend until smooth, adding more non-dairy milk if you desire a more liquid-y frosting. Place the frosting in the fridge until ready to use.
  • When the doughnuts are finished baking, remove them from the oven and allow them to cool. Then frost them and enjoy!

Notes

For a lighter touch, skip the frosting and do a quick dusting of powdered sugar just before serving.
