Baked Vegan Powdered Doughnuts

Ingredients

  • 1 flax egg 1 tablespoon ground flaxseed + 3 tablespoons water
  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 cup non-dairy milk
  • 2 tablespoons melted coconut oil
  • 1 tablespoon vanilla
  • Coating: powdered sugar

Instructions

  • Preheat your oven to 350 °F and grease doughnut pans with cooking spray.
  • Prepare your flax egg by whisking together 1 tablespoon of ground flaxseed with 3 tablespoons of water. Set aside to thicken.
  • In a large bowl, whisk together the flour, sugar, baking powder, and spices.
  • Add in the remaining ingredients, including your thickened flax egg and stir until combined.
  • Scoop the dough into a zip lock bag and cut the tip off. Pipe the dough into 12 doughnut rounds until about ¾ full.
  • Bake the doughnuts for about 15-17 minutes or until cooked through.
  • Remove from the oven and allow them to cool for about 5 minutes before removing the doughnuts and placing them on a metal rack to cool.
  • Once cooled, coat with powdered sugar.
  • Enjoy!

Notes

Make sure the doughnuts are completely cool before coating in powdered sugar or it will simply soak in.
