Vegan 7 Layer Bars

With a cookie base, a sweet creamy middle and decadent toppings, these Vegan 7 Layer Bars are sure to be a hit!

Ingredients

  • 1 cup almond flour
  • ¾ cup oat flour
  • 3 tablespoon maple syrup
  • 3 tablespoon coconut oil
  • pinch sea salt
  • 1 jar vegan sweetened condensed milk you may not use it all
  • ½ cup nuts chopped
  • 1 cup dairy free chocolate chips
  • 1 cup flaked coconut

Instructions

  • Preheat your oven to 350 °F.
  • Line an 8x8 baking dish with parchment paper or grease it with cooking spray. Set aside.
  • In a mixing bowl, whisk together the almond and oat flour. Add in the coconut oil and maple syrup and stir until a dough forms. Press it into the bottom of your lined baking dish until it's in an even layer.
  • Pour over some of the sweetened condensed milk until the entire base is covered in a thin layer.
  • Sprinkle over the chopped nuts, chocolate chips and shredded coconut, making sure every part of the base has been well covered.
  • Drizzle a little more sweetened condensed milk overtop.
  • Bake the bars for about 25-30 minutes or until bubbling and the edges are starting to turn golden brown.
  • Allow the bars to cool to room temperature before placing the pan in the refrigerator for a few hours or overnight. This will make the bars much easier to cut!
  • When ready to serve, remove the bars from the fridge and cut them into bars
