Vegan Whole Grain Waffles

  • In a liquid measuring cup, combine the apple cider vinegar and non-dairy milk to form "buttermilk." Set the mixture aside.
  • In a mixing bowl, mix together the dry ingredients, from the whole wheat flour to the salt.
  • Next add the remaining wet ingredients--the coconut oil, maple syrup, vanilla extract and thickened buttermilk--into the dry ingredients. Stir until just combined, being careful not to over-mix.
  • Allow the mixture to sit for 30 minutes.
  • Preheat your waffle maker.
  • Once your waffle maker is ready, spray it with non-stick cooking spray before adding the batter and cooking the waffles according to your waffle maker's instructions.
  • Top the warm waffles with your favorite toppings.
  • This recipe mades 4 large, circular waffles.
