In a liquid measuring cup, combine the apple cider vinegar and non-dairy milk to form "buttermilk." Set the mixture aside.
In a mixing bowl, mix together the dry ingredients, from the whole wheat flour to the salt.
Next add the remaining wet ingredients--the coconut oil, maple syrup, vanilla extract and thickened buttermilk--into the dry ingredients. Stir until just combined, being careful not to over-mix.
Allow the mixture to sit for 30 minutes.
Preheat your waffle maker.
Once your waffle maker is ready, spray it with non-stick cooking spray before adding the batter and cooking the waffles according to your waffle maker's instructions.
Top the warm waffles with your favorite toppings.
