Vegan Gingerbread Recipe

  • Preheat your oven to 350℉ and line a standard loaf pan with parchment paper. Set aside.
  • In a small bowl, whisk together 2 tablespoons ground flaxseed and 6 tablespoons of water. Set aside to thicken.
  • In a mixing bowl, whisk together the dry ingredients, from the whole wheat flour to the salt.
  • Add the remaining ingredients, including the thickened flax egg, to your dry ingredients and stir until just combined.
  • Pour the batter into your lined loaf pan and smooth the top down until even.
  • Bake the loaf for 35-45 minutes, checking occasionally after 35 minutes. You want a toothpick inserted into the center to come out clean and the top to not stay indented when touched with your finger. Once cooked through remove the loaf from the oven and allow it to sit for about 10 minutes before carefully lifting it out with the parchment paper to continue cooling on a wire rack. Once completely cook, slice and serve. You can also frost the top with vanilla frosting if you want to transform this loaf into a festive dessert!

Notes

*Add-in ideas: chopped dried fruit, chopped apple, chopped nuts or a combination of all of these items. Just be sure to chop the add-ins into fairly small pieces so that the loaf holds together when sliced.
