Curried Carrot White Bean Hummus (Mom and Kid Approved!)

Ingredients

  • 1 large carrot peeled and boiled
  • 14 ounces white beans drained and rinsed
  • 2 cloves of garlic minced
  • Juice of 1 large or 2 small lemons
  • 3 tablespoons tahini
  • 1 teaspoon curry powder*
  • ½ teaspoon cumin
  • ½ teaspoon salt or to taste
  • 2-4 tablespoons water

Instructions

  • Start by bringing a pot of water to boil. Peel and cube your carrot and boil it until fork tender.
  • While the carrot is cooking, place all of the remaining ingredients into a food processor, starting with just 2 tablespoons of water.
  • Once the carrot is cooked, drain the water and add the boiled carrot to the food processor.
  • Process the hummus until smooth and creamy, adding a little more water and scraping down the side of the bowl if needed.
  • Store in an airtight container for up to a week.

Notes

*I highly recommend using a good quality curry powder!
