large carrot
peeled and boiled
14

white beans
drained and rinsed
2
cloves
of garlic
minced
Juice of 1 large or 2 small lemons
3
tablespoons
tahini
1
teaspoon
curry powder*
½
teaspoon
cumin
½
teaspoon
salt
or to taste

Instructions
Start by bringing a pot of water to boil. Peel and cube your carrot and boil it until fork tender.
While the carrot is cooking, place all of the remaining ingredients into a food processor, starting with just 2 tablespoons of water.
Once the carrot is cooked, drain the water and add the boiled carrot to the
food processor
.
Process the hummus until smooth and creamy, adding a little more water and scraping down the side of the bowl if needed.
Store in an airtight container for up to a week.
Notes
*I highly recommend using a good quality curry powder!
