Simple Vegan French Toast
I'm all about simple breakfasts. Not because I don't like spending time in the kitchen--believe me, I do--but because I'm huuuuungry. I just don't like waiting to eat breakfast in the morning if I can help it. That's why this Simple Vegan French Toast is a keeper. It's not only delicious, filling and sweet, it's also so easy to make.

- 8-10 slices of sandwich bread cut in half diagonally
- 2 cups non-dairy milk oat, almond, soy
- 2 tablespoons (heaping) ground flaxseed
- 1 tablespoon maple syrup
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 teaspoon nutritional yeast optional*
Optional: If you have time, slightly toast the slices of sandwich bread in a toaster or under the broiler until lightly browned. Cut in half diagonally and set aside.In a medium sized bowl, whisk together the remaining ingredients and let sit for 3-5 minutes to thicken.
Heat a medium sized skillet over medium-low heat. Spray the pan with non-stick cooking spray or lightly coat with coconut oil. Dunk the slices of toasted sandwich bread into the milk mixture, making sure both sides get fully coated.
Place as many pieces as will fit on the heated skillet and let them cook for 3-5 minutes until starting to brown. Flip the slices over and cook on the opposite side until browned.Serve warm with pure maple syrup.
*I love the addition of nutritional yeast in this recipe! It gives the french toast a slightly eggy flavor.
