Simple Vegan French Toast

I'm all about simple breakfasts. Not because I don't like spending time in the kitchen--believe me, I do--but because I'm huuuuungry. I just don't like waiting to eat breakfast in the morning if I can help it. That's why this Simple Vegan French Toast is a keeper. It's not only delicious, filling and sweet, it's also so easy to make.

Ingredients

  • 8-10 slices of sandwich bread cut in half diagonally
  • 2 cups non-dairy milk oat, almond, soy
  • 2 tablespoons (heaping) ground flaxseed
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 teaspoon nutritional yeast optional*

Instructions

  • Optional: If you have time, slightly toast the slices of sandwich bread in a toaster or under the broiler until lightly browned. Cut in half diagonally and set aside.In a medium sized bowl, whisk together the remaining ingredients and let sit for 3-5 minutes to thicken.
  • Heat a medium sized skillet over medium-low heat. Spray the pan with non-stick cooking spray or lightly coat with coconut oil. Dunk the slices of toasted sandwich bread into the milk mixture, making sure both sides get fully coated.
  • Place as many pieces as will fit on the heated skillet and let them cook for 3-5 minutes until starting to brown. Flip the slices over and cook on the opposite side until browned.Serve warm with pure maple syrup.

Notes

*I love the addition of nutritional yeast in this recipe! It gives the french toast a slightly eggy flavor.
