These Molasses Bran Muffins really are classic! They are fiberlicious, oil free, and refined sugar free. If you like nuts, go ahead and throw some in! If you're not a fan of raisins, swap them out for your favorite dried fruit. These muffins are so versatile, easy to make, and not overly sweet which makes them perfect for a grab-n-go breakfast.
Preheat your oven to 400 °F and lightly spray a muffin pan with cooking spray or line it with muffin liners.
Start by making your flax eggs. Whisk together 2 tablespoons of ground flaxseed with 6 tablespoons of water and set aside to gel for 5 minutes.
Next prep your raisins by soaking them in hot water (optional step).
In a large bowl whisk together the dry ingredients. Stir in the raisins and the nuts, if using.
In a separate bowl combine all the wet ingredients. Add the wet ingredients into the dry ingredients and mix until just combined. Try not to over mix.
Divide the batter among the 12 muffin tins and bake the muffins for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool and enjoy!
