Molasses Bran Muffins Recipe {Vegan}

These Molasses Bran Muffins really are classic! They are fiberlicious, oil free, and refined sugar free. If you like nuts, go ahead and throw some in! If you're not a fan of raisins, swap them out for your favorite dried fruit. These muffins are so versatile, easy to make, and not overly sweet which makes them perfect for a grab-n-go breakfast.

Ingredients

DRY INGREDIENTS:

  • 1 cup wheat bran
  • 1 ½ cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt

WET INGREDIENTS:

  • 1 cup non-dairy milk
  • ½ cup molasses or maple syrup, agave, honey
  • 1 large banana mashed (~½ cup)
  • 2 flax eggs 6 tablespoons water + 2 tablespoons ground flaxseed
  • 2 tablespoons unsweetened applesauce

MIX-INS:

  • ½ cup raisins
  • ¼ cup chopped nuts optional

Instructions

  • Preheat your oven to 400 °F and lightly spray a muffin pan with cooking spray or line it with muffin liners.
  • Start by making your flax eggs. Whisk together 2 tablespoons of ground flaxseed with 6 tablespoons of water and set aside to gel for 5 minutes.
  • Next prep your raisins by soaking them in hot water (optional step).
  • In a large bowl whisk together the dry ingredients. Stir in the raisins and the nuts, if using.
  • In a separate bowl combine all the wet ingredients. Add the wet ingredients into the dry ingredients and mix until just combined. Try not to over mix.
  • Divide the batter among the 12 muffin tins and bake the muffins for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    Let cool and enjoy!

Notes

You can swap the raisins with any dried fruit you like and use any liquid sweetener that you desire!
