In a mason jar or sealable container, stir together the oats, chia seeds, spices and salt.
Add in the non-dairy milk, pumpkin puree and maple syrup and stir well until everything is combined and there are no clumps of chia seeds.
Seal the jar and store it in the fridge overnight or at least for 4 hours.
Once the oats have soaked you can enjoy them straight out of the jar or transfer them to a bowl and add your favorite toppings!
Notes
*If you don't have pumpkin pie spice, feel free to use a mixture of cinnamon, ground ginger and cloves. Alternatively you can make your own homemade pumpkin pie spice which I share how to do in the blog post.
