Vegan Chipotle Mayo

Made with a base of cashews and flavored with chipotle peppers, this Vegan Cashew Mayo is the perfect flavor-packed sauce!

Equipment

  • 1 blender preferably high speed

Ingredients

  • 1 cup raw cashews soaked in boiling water for 15 minutes
  • ½ cup water plus more as needed
  • 2 tablespoons lemon juice
  • 1 tablespoon lime juice
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon sea salt
  • 2 chipotle peppers in adobe sauce + 3-4 teaspoons adobe sauce

Instructions

  • Soak your cashews in boiling water for about 15 minutes. If you own a high speed blender, you can also skip this step. Drain and rinse the cashews.
  • Place all of the ingredients into your blender and blend until smooth. Start with fewer peppers if you're worried about the spice level. You can always add more!
  • Taste and add more chipotle peppers for kick, salt for saltiness, lemon or lime juice for tang and/or water for a runnier consistency.

Notes

- I usually find Chipotle Peppers in Adobe Sauce in the international aisle at the grocery store.
