Made with creamy cashew milk and sweetened with maple syrup, this Homemade Cashew Milk Hot Chocolate is a special version of your favorite holiday beverage!
Place the 1 cup of cashews in a bowl and cover with boiling water. Allow them to soak for about 10 minutes. Strain and rinse.
Place the soaked cashews in a high speed blender along with 5 cups of water. Blend on high for about 1 minute until smooth.
If you don't have a high speed blender, strain the cashew milk through a fine mesh strainer or some cheese cloth to remove the cashew pulp.
To prepare 1 serving of Homemade Cashew Milk Hot Chocolate, start by whisking together the cocoa powder, maple syrup and hot water in a small sauce pan over medium high heat.
Continue whisking the mixture until it comes to a boil.
Reduce the heat to low and pour in 1 cup of your homemade cashew milk and whisk to combine.
Allow the hot chocolate to heat through before pouring it into a mug and serving.
