    Why Plants?

    In the past I would often have stomach aches after eating certain foods such as rich desserts, frozen yogurt, and processed foods. It was annoying. I then heard about the "Forks Over Knives" documentary and was quickly convinced that my idea of healthy eating (tons of greek yogurt, low-calorie or sugar free foods, pretzels and processed turkey deli meat) wasn't quite as healthy as I thought. I took on a plant-based diet cold turkey. And I haven't turned back. 

    It hasn't been a completely smooth experience since I cut out all meat, dairy and eggs from my diet. I've definitely botched a few meals (and still do!) and often struggle to find things to eat in social settings, but it's been worth it. It's gotten easier too as I've continued to research plant-based recipes and experiment in the kitchen. 

    I'm excited you're checking out my blog because it means you have an interest in cooking and are possibly considering changing your diet. To be honest, I sometimes still can't believe I have cut out meat, eggs and dairy from my diet. I used to think vegans and vegetarians were crazy and I swore that I could never stop eating dairy. Yet the more I've learned about the benefits of a plant-based diet and have experienced those benefits, I don't think I'll ever go back!

    Whether you're vegan, vegetarian or neither, I hope this blog can help you find more ways to eat consciously.

      Hi Faith,

      My name is Mercedes, Im Mexican and I found you via Instagram. I loove your cooking and how you enjoy eating. I decided to go plant based, since I stopped craving animal products. My body tells me to eat more greens and fruits. I just have the doubt about vitamin B12 supplement. I don't know in what ratio would I take it, if 500mg or more ? do you recommend any ?

        Hi Mercedes! I'm so glad you said hi! I take this Solgar Sublingual vitamin b12 methylcobalamin . However, I would recommend talking to your doctor for how much you need! I hope that helps!

      My husband and I are going vegan. We are in the process of stocking the house and giving our kids the stuff we cannot eat. We are planning a last few fun meals to use up a few things t his weekend, and t hat is it. I am already all but eating vegan, but we will both be completely vegan on Monday when we get up.
      I am excited about the health benefits and we both know dairy affects us.
      I am thrilled to find your blog and look forward to learning more !!I just got on Amazon and ordered a nut bag so I can start making my own milks, currently buying almond milk .
      thanks for sharing your recipes and experience, I know some, but need to learn a lot !!!

        Stephanie that's amazing! What a huge life change! I went vegan overnight and it was hard at first and I ate non-vegan foods occasionally as I adjusted, but it's one of the best decisions I made and now eating vegan couldn't be easier, even in China! So fun you're going to start making almond milk. It's especially yummy if you sweeten it with dates and vanilla:) seriously, let me know if you have any questions along the way!!

      Forks over Knives was the tipping point for us, too. We had digestive issues, also, giving up red meat first, and then the rest. We've recently gone from not-so-healthy vegetarians to trying-to-be-healthier vegans. It is not as hard as we thought, although we slip on the dairy from time to time and still have some processed foods on occasion.

Slip ups happened for me when I first made the change, but now I don't even consider non-plant foods. It gets easier!! So glad you're able to find inspiration on my site.       I'm so glad you've found the right diet for your body! Forks over Knives also had a significant impact on the way I eat. While I've had to add a few things back in for health reasons, I would never go back to the way I ate before. Thank goodness for the good information that's out there these days and the freedom to choose!
