I'm back! After moving to Malaysia I'm feeling so inspired to get back in the kitchen and to share more of my favorite, plant-based recipes with you all, starting with this curried carrot white bean hummus!
I know that's a mouthful of a name, but all of those components are what make this hummus so so good. The white beans provide the creaminess. The carrots provide the vibrant color. And the curry powder provides so much depth of flavor. I could honestly eat a whole batch by the spoonful in one sitting!
Before we get to the details of this recipe, I want to make sure we're all on the same page about hummus.
What ingredients do you need to make hummus?
Hummus is a widely popular Middle Eastern dip and/or spread. Generally, hummus is made by blending chickpeas, tahini, olive oil, garlic, lemon juice and salt together until smooth and creamy. When served it's often drizzled with more olive oil and served with flatbread, falafel or as a meze, a small dish served as an appetizer.
Is hummus vegan?
Yes! Traditional hummus is plant-based and vegan. While there are tons of different variations of hummus these days, you shouldn't have to worry about hummus having animal products in it when you order it from a restaurant.
Is hummus healthy?
We all know everyone has a different definition of healthy, but in my opinion hummus is a healthy and nutritious dip, especially when made at home where you can control the ingredients. Thanks to beans, hummus is full of plant-based protein and fiber to keep you full and satiated. It provides a good source of iron and contains lots of healthy fats from tahini and olive oil. I am always adding hummus to different dishes and additionally allow Harper to eat as much as she wants!
Can you Make Hummus Without Tahini?
While it won't be traditional hummus recipe and will have a different flavor, you can definitely make hummus without tahini. Some substitutions could be other kinds of nut or seed butters, whole sesame seeds or sesame oil, or even an unsweetened yogurt for a fun, unique spin on hummus!

Curried Carrot White Bean Hummus (Mom and Kid Approved!)
Equipment
Ingredients
- 1 large carrot peeled and boiled
- 14 ounces white beans drained and rinsed
- 2 cloves of garlic minced
- Juice of 1 large or 2 small lemons
- 3 tablespoons tahini
- 1 teaspoon curry powder*
- ½ teaspoon cumin
- ½ teaspoon salt or to taste
- 2-4 tablespoons water
Instructions
- Start by bringing a pot of water to boil. Peel and cube your carrot and boil it until fork tender.
- While the carrot is cooking, place all of the remaining ingredients into a food processor, starting with just 2 tablespoons of water.
- Once the carrot is cooked, drain the water and add the boiled carrot to the food processor.
- Process the hummus until smooth and creamy, adding a little more water and scraping down the side of the bowl if needed.
- Store in an airtight container for up to a week.

I was so excited when I read this recipe! We love hummus! I picked up a couple of cans of beans the next day so I could double it for our masses, and yesterday my 15 year old helped me fix it up. It wasn’t till then that I realized I had no tahini and was fresh out of curry powder. Lol
I tossed in some extra cumin and turmeric to make up for the lack of curry and some sesame seeds to replace the tahini...in a way. Anyway, we loved it! Used it with crackers, jicama and carrot sticks and ate it alongside some peas last night. (I dipped some chicken in it too, since I’m not vegan. I just love real food made from real ingredients. I hope that’s ok. Lol)

I jumped right in and made it today. The whole batch is almost gone already. Haha. Soooo good! I think it would be awesome to blend with some water and add it to pasta as kind of a sauce. Will try that next 🙂

I think a lot of the vegan food I prepare for myself is somewhat bland (pressure-cooked beans, steamed vegetables, quinoa/bulgur, sautéed tofu) so a nice dollop of this hummus would be a great way to liven it up. Thanks!
