I have two really exciting things to share with you all.
#1: In exactly one month I will be on a plane headed to China!
#2: I just bought a 220v Vitamix!
I’m actually not sure which one I’m more excited about. Moving to China is pretty remarkable, but I’ve been wanting a Vitamix for a few years now and the fact that it will be waiting for me once we get to China makes me grin. I can’t wait to throw any and every whole food into that blender, push a button, and have healthy soup ready to eat. Not to mention nut butter creations galore and banana ice cream out the wazoo.
I’m hoping that amidst all the stress of trying to figure out the food situation in a completely foreign country, a nice blender will make learning to cook in China a little bit easier. I at least know that fruits and veggies are easy to come by, so if worse comes to worse, we can live off smoothies and soups until I get my bearings.
If any of you have a high-speed blender, let me know your favorite easy recipes! I have quite a long list of easy, whole food recipes that I’m excited to try out, but I’m always welcoming suggestions!
In regards to moving to China, Brett and I have made quite a lot of progress in the packing department. Brett’s parents were here visiting last weekend and they were able to take four of our suitcases with them to Nashville where they live.
Two of the bags are full of things we’ll store at their house in Nashville and two of the bags were full of things we’ll be taking with us to China. Getting those four bags out of the house felt really good. Everything else we’re taking with us is practically packed as well and we have most of our large furniture up on craigslist.
So far we’ve sold our kitchen table and chairs, Brett’s nice Herman Miller chair, our microwave, and two bikes. Not too shabby! All the other little things we didn’t put up on craigslist we’ll either be giving away to all our friends here in NYC or throwing out.
I can’t wait to be living simply.
I keep telling Brett that I don’t want our apartment in China to get filled up with random stuff. I love a clutter-free, simple living space, and I’m hoping we can keep our apartment in China nice and spacious!
One a completely different note, let’s talk about toast!
I’ve always loved toast. Bread in any form, actually, is a favorite of mine. But there’s something about toast that is so comforting.
Maybe it’s memories of finally getting to eat solid food after being sick and cautiously nibbling on dry toast. Or simple cinnamon and sugar toast with a side of eggs for breakfast growing up. Or the classic peanut butter toast that me and my sister would eat so often alongside our salads for lunch.
Whatever it is, I’m pretty sure toast will be my friend for quite some time.
Today I thought it would be fun to share with you some creative plant-based toast ideas that are perfect for breakfast, lunch, dinner, and everything in between.
This isn’t really a recipe, but more of some fun flavor combinations that you can try out. The possibilities are limitless when it comes to toast.
You can do savory, sweet, creamy, simple, dry, piled high…you get the picture.
These recipes can easily be gluten-free as well…just use your favorite gluten-free bread! Let me know some of your favorite toast creations in the comments!

Ingredients
Peanut Butter Banana and Granola Toast
- 1 piece of whole grain bread, toasted*
- 2 tablespoons natural peanut butter
- 1/2 ripe banana, sliced
- granola
- cinnamon
- drizzle of maple syrup
Creamy Sweet Potato Toast
- 1 piece of whole grain bread, toasted*
- 1/2 cup roasted, mashed sweet potato
- 1/2 tablespoon tahini
- pumpkin seeds
My Favorite Avocado Toast
- 1 piece of whole grain bread, toasted*
- 1/4 ripe avocado
- 1/2 tablespoon nutritional yeast
- sea salt
- freshly ground black pepper
Chocolate Coconut with Nuts Toast
- 1 piece of whole grain bread, toasted*
- Homemade Chocolate Pecan Butter
- shredded coconut
- chopped pecans or hazelnuts
Instructions
- Start by toasting the bread either in a toaster on using the broiler setting on your oven.
- Spread each piece of toast with a different base layer, whether thats a nut butter, mashed avocado, or mashed sweet potato.
- Add the remaining toppings, sweeteners or spices to each piece of toast.
- Dig in!
Notes
*Use gluten-free bread if you're gluten free!
Get creative and make your own creations using different kinds of nut butters, hummus, fresh or dried fruit, veggies, and spices!

My favorite is PB&J (gluten-free now,) toast. And I always loved a good grilled cheese sandwich!

These all look awesome! I don’t know if you saw it (I’m guessing not since she’s not your style of cooking at all) but the Pioneer Woman did a post about how toasts are such a trendy thing now in restaurants but they’re so simple to make! She gave some other easy toast ideas and I can’t remember what all of them were, but I’d be willing to bet they’re not quite as healthy as yours. YUM!
