I can't believe I forgot about molasses! Good ol' sticky, rich, gooey Molasses. I was trying to reorganize my baking cupboard (quite a feat) and came across a jar of molasses shoved way in the back. Of course my head started spinning with possible molasses recipes. I think molasses is an ingredient that isn't given much credit. It does sound a little bit old school and boring, but a hint of it goes a long way to give foods that warm, holiday taste.
Since I've been on quite a bran kick recently after buying wheat bran for making my own Homemade Bran Flakes, I thought right away, "What better way to use molasses than to pair it with bran!?"
Yes. I was that excited about bringing such a classic combination back into my life. What can I say? I unashamedly love to bake!

If you're not a fan of raisins, swap them out for your favorite dried fruit. These muffins are so versatile, easy to make, and not overly sweet which makes them perfect for a grab-n-go breakfast.

Using molasses in these Molasses Bran Muffins reminded me of some other recipes I made early on when I started this blog. I had forgotten about my Pumpkin Bran Muffins, Gingerbread Cookie Oatmeal, and this awesome Chocolate Mug Cake. While certain posts and pictures can be painful to look at, it's fun to see how far my cooking/baking/photography skills have come since a year ago. I'm so thankful for this space where I can be creative and share with others what recipes work for Brett and me.

Molasses Bran Muffins Recipe {Vegan}

Ingredients
DRY INGREDIENTS:
- 1 cup wheat bran
- 1 ½ cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
WET INGREDIENTS:
- 1 cup non-dairy milk
- ½ cup molasses or maple syrup, agave, honey
- 1 large banana mashed (~½ cup)
- 2 flax eggs 6 tablespoons water + 2 tablespoons ground flaxseed
- 2 tablespoons unsweetened applesauce
MIX-INS:
- ½ cup raisins
- ¼ cup chopped nuts optional
Instructions
- Preheat your oven to 400 °F and lightly spray a muffin pan with cooking spray or line it with muffin liners.
- Start by making your flax eggs. Whisk together 2 tablespoons of ground flaxseed with 6 tablespoons of water and set aside to gel for 5 minutes.
- Next prep your raisins by soaking them in hot water (optional step).
- In a large bowl whisk together the dry ingredients. Stir in the raisins and the nuts, if using.
- In a separate bowl combine all the wet ingredients. Add the wet ingredients into the dry ingredients and mix until just combined. Try not to over mix.
- Divide the batter among the 12 muffin tins and bake the muffins for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let cool and enjoy!
