Especially during the summer months when they are in season.
We love strawberries on top of Vegan Strawberry Shortcake, turning them into Berry Compote, or for a really simple, yet decadent dessert, I love to whip up these Simple Berries and Cream Parfaits!
What's not to love about creamy Coconut Milk Whipped Cream layered with fresh, seasonal berries and homemade granola?!
I know you guys will love this simple, yet delicious dessert!
Let me show you how to make it.
What is a Parfait?
Before we jump into this simple recipe, you may need a little refresher on what a parfait actually is.
A parfait is an originally French dessert that consists of layers of custard and fruit. It's often served in a tall glass with a long spoon.
Americans have adapted parfaits to include ice cream, whipped cream or yogurt which are layered with fruit and other foods such as granola.
Berries and Cream Parfaits Ingredients
There is no right or wrong when it comes to making parfaits.
You really can use whatever fruit you have on hand.
We personally love the combination of berries, cream and granola, but get creative and use whatever you desire!
To replicate these simple berries and cream parfaits, however, you'll need the following ingredients:
- Berries (whatever you have access to, fresh if possible!)
- Coconut Milk Whipped Cream
- Granola (or any other crunchy topping of choice)
Instead of granola you could also use broken up cookies or cake or granola bars.
The possibilities are endless!
How to Make Parfaits
Parfaits are really easy to make, especially if you utilize seasonal fruit and store-bought items.
In today's simple vegan berries and cream parfaits, you'll simply be layering coconut milk whipped cream, berries and granola in whatever order you desire, to create a vibrant, layered affect!
Step 1: Place some fresh berries in a tall (or short!) clear glass.
Step 2: Dollop some homemade coconut milk whipped cream on top.
Step 3: Sprinkle on some homemade granola.
Step 4: Continue this process until you have as many layers as desired.
Step 5: Serve immediately and enjoy!

Ingredients
- Fresh berries blueberries, strawberries, raspberries, etc.
- Homemade Coconut Milk Whipped Cream
- Granola
Instructions
- Start by preparing the homemade Coconut Milk Whipped Cream. Then in some glasses, layer the berries, Coconut Milk Whipped Cream, and granola however you desire.
- Eat immediately!

I've never made coconut whipped cream. After being vegan for so long, I just go used to holding the whip. I really need to try it because these look so good.

So lovely you got to enjoy a 'last hurrah for this year' with his family. I can only imagine going there knowing you won't be back for at least a year - when I went to England for college, I had a round-trip ticket already bringing me back for Christmas 10 weeks later! I think had I only been able to come home once a year making it through Oxford would have been much tougher. But - you and Brett will have each other so you won't be alone!

Thanks so much Alyssa!! You're right. I think it will even be harder for the family we're leaving behind. We have adventures in China to look ahead to, but our family just have a Brett and faith-sized hole:( hopefully not being able to come home for a while will help us in the long run to feel settled, but it'll be hard at times for sure!
