WIAW: Green Smoothies and Roasted Veggies

Sep 26, 2022 by Faith VanderMolen

So....I've been thinking about delving into videos. What do you think? Would you want to see stand after stand of fresh, tropical fruit, where I buy my groceries, where and how I cook my food, how Chinese people exercise, or other random Chinese life scenes? Let me know. We'll see if it happens, but I thought every once in a while I could do a WIAW video showing you more of my life here in China!

Until then, I just have some pictures of the two large meals I ate the other day. I've been eating so much oatmeal lately (it's rainy season here), but the other day I finally made a huge Refreshing Green Smoothie for breakfast and ate it with some toast. It was a sweet and delicious way to get in a small head of lettuce first thing in the morning. Sounds appetizing doesn't it? Trust me. It was!

    Breakfast:

A blender-full of my Refreshing Green Smoothie with two slices of Homemade Whole Wheat Sandwich Bread and Flax Cinnamon Peanut Butter. Trust me, I refilled that glass multiple times with smoothie. So good!

    IMG_7564

    Dinner:

This meal is one of my favorites. Steamed rice, baked sweet potato and ALL the roasted veggies. If you have a hard time eating vegetables, try roasting them! I roast mine without oil on a my favorite silicone baking mats and then just add my favorite condiments and toppings. This night I had roasted zucchini, carrot, Shiitake mushrooms, bell pepper and red onion. Then I topped everything with nutritional yeast, red chili flakes and later, buffalo sauce. This meal hit the spot and all the starches filled me right up!

    Tell me:

What's your favorite way to cook vegetables?

Have you ever made or edited a video?

    What are your favorite condiments?

Thanks Laura, Arman and Jenn for the link-up!

My favorite way to cook veggies are roast them with different spices, whatever I'm in the mood for.

I've never made a video, but love yours!

My favorite condiment is spices and Earth Balance Butter!! OMG!!! So good.

I love roasting or grilling veggies! I easily devour them with no condiments. And I love how simple your bread recipe is, I've always wanted to just make my own.

Roasted veggies really are so good on their own. And I hope you can give the recipe for the bread a try! I really need to make a new post on it so that the instructions are all together and easier to read...beginning blogger issues haha!

I would love to see more of China, I feel like I know a tiny bit from reading your posts for a while now, but seeing it would be awesome. This day of eats is totally my style, I've been drinking tons of green smoothies lately and potatoes + veg + nooch has been my dinner for over a week now <3 It's so good it's hard not to crave every night!

I'd love to see videos from you!! It would be so neat and I'm sure they'd be beautiful. You made a wiaw video once right?? I think that's what first inspired me to get into video actually!!
I just got a silicone mat and it's life changing. Makes life so much easier. Roasted veggies are always my fave <3 Even during the summer. Grilled veggies are also SO good!! I'll happily eat veggies cooked any which way 🙂

Flax cinnamon peanut butter? Sounds so intriguing. And your dinner looks gorgeous!
I don't typically edit or make videos - I also don't watch them too often because they take longer than pictures, but that's just me 🙂 I love mustard, honey, salsa and hot sauce as my favorite condiments. But not all together!

I'd like to get on a smoothie train. My craving for vegetables is so minuscule these days, it would be nice to know I'm getting them in at least some how.
