    WIAW: I love sweet potatoes

    Have you ever discovered a new favorite food and then continued to eat that new-favorite-food everyday?

    What about every meal?

    Well, I officially confess that I'm currently a sweet potato addict. With their stunning color, sweet insides, and satisfying effect, how could I not be?! Especially now that I've discovered purple sweet potatoes and that Brett and I have an oven to cook them with, I've gone baked sweet potato crazy! At the beginning of each week I roast a bunch of sweet potatoes at once and store them in the fridge. That way I can put together a hearty and delicious meal in a matter of minutes. They're even delicious cold and can be made sweet or savory.

    While my meals on Monday may seem strange to most, they were delicious to me and kept me satisfied and energetic throughout the day.

    I love sweet potatoes for breakfast!

    I ate one sweet potato and two purple sweet potatoes topped with banana, cinnamon, and my homemade Caramelized Buckwheat Groats. This combination is amazing and if you haven't tried it you, you really should!

    I love sweet potatoes for lunch!

    Lunch came together in a flash. I heated up some pre-cooked brown rice with leftover cauliflower Alfredo sauce and peas, added a simple side salad and a baked purple sweet potato and lunch was served. Of course, nutritional yeast also made an appearance!

    I love sweet potatoes for dinner!

    Dinner was another quick and sweet-potato-filled meal. I again flavored my veggies with some pre-made cauliflower Alfredo sauce and had a large sweet potato on the side. Gosh, they're just so good!

    And that's it! Sweet potatoes fill me up so well so I usually don't feel the need to snack between meals. Also, because they're so naturally sweet, I never feel the need for an after meal dessert.

      omg whole foods just brought in stokes purple sweet taters and you know I bought my money's worth. They are my favourite but so hard to find. But in general, sweet tater lover over here! That and kabocha. There is a reason I glow orange 😉

      I just bought a few Japanese sweet potatoes that are purple on the outside and white on the inside and I'm trying to decide how to make them! My favorite way to make regular sweet potatoes is to cut them into thick wedges and roast them till they're crispy, but I love your idea of baking a bunch of whole ones at the beginning of the week and have actually been considering doing that, too. I think I'll give that a try!

        I'm kicking myself because I bought a Japanese sweet potato one time when I lived in America, but I thought it was a sweet potato. So when I opened it up and it was white I didn't know what to do with it so I never ate it. But I hear their amazing and now I don't access to them...whoops!! I love roasting sweet potatoes whole, because they become super sweet. But I found that cutting them in half length-wise and laying the flat side down allows them to cook so much faster and they're still just as sweet. Just a little fyi for ya;)

      I absolutely love sweet potatoes, but my boyfriend doesn't like them!! Since I travel for work every week, I only get so many meals to cook at home and they are often together. Thankfully he likes squashes though!!

      I love love love sweet potatoes as well and could probably eat them for every meal too! I've never actually had a sweet version of sweet potatoes but your breakfast sounds absolutely delicious and I want to try it! What recipe did you use for the cauliflower Alfredo sauce? It looks delicious!

      i LOVE sweet potatoes too! In fact, my skin has a slight orange tint from them lol! I don't blame you for eating them at every meal because they are so delicious!

      So much yes!! In love with all of these meals and am seriously craving sweet potato! I love japanese sweet potatoes and the purple ones the most, so sweet and delicious!!

        I'm so bummed I didn't try Japanese sweet potatoes before I moved here. The area I live in is known for potatoes, but I've yet to see a Japanese one. I'll have to get my hands on some the next time I'm in America!

      "Baked sweet potato crazy" - I love it. Sweet potatoes are such nutrient-dense foods; one thing dietitians love to recommend! And they taste great. I love how you show how versatile they are and can be eaten at every meal!

      I love sweet potatoes too and have been eating them a lot lately, I wish the purple ones were more widely available! I've definitely had days where I ate eggs at the center of every meal, or had slices of a favorite new bread recipe with each. That's happening with my Pumpkin Apple Spice Loaf right now!

      I, too, am a sweet potato addict and prrouuuudddd of it. Although I must admit, I don't think I've ever had a purple one. I see them now floating around the blog-o-sphere so I've gotta find myself one! I definitely meal prep a few sweet potatoes at the beginning of the week - roasted or baked. They are so easy and you can top them with ANYTHING. Your meals look absolutely droooolll worthy - and beautiful!!

      Yay for sweet potatoes! Theyre my fave too. Yours look so pretty. I tried to do meal prep, but lately we have been gone on the weekends so each day I have to fend for myself.
