Brett and I had a great time snowboarding yesterday! Thanks for all your well-wishes on my post on Monday! Brett did an AMAZING job for his first time snowboarding. I was seriously so impressed. He was doing both heel and toe turns before lunch...before lunch! When I first went snowboarding it took me a couple of days to learn how to turn both ways. He did still fall quite a bit initially and he thinks he might have sprained/broken his wrist. It didn't keep him from enjoying the rest of the day, but he says it's not feeling good and his wrist feels just like his other wrist felt when he broke it in the past. He's at the doctors now as I write, so I'll keep you posted!
The conditions were better than I expected in regards to the snow, but it was extremely cold! I had to go into the lodge to warm up more than I wanted because my cheeks (notice we didn't have ski goggles!) felt frostbitten. I may have taken a few power naps as well:)
Brett and I love finding new recreational activities that we both enjoy and can do together. It's amazing how a day of activity together makes us feel closer. Yeah, he's pretty great.
Okay okay. Now for what you came for...3 Ingredient Reese's Energy Bites!
These lil' bites are chocolaty, rich and delicious. They took me no time to make and are perfect for quick snacks on the go. I took some of these energy bites with us snowboarding on Monday and they were the perfect snack for quick and delicious energy. I just kept a few in my pocket in a plastic baggie and we enjoyed them on the long lift rides up the mountain. YUM!
I know I've posted a lot of energy bite recipe on the blog, such as Peanut Butter and Nutella Energy Bites and Chocolate Superfood Energy Bites, and I don't think I'll stop anytime soon! There are so many combinations to experiment with and they are the perfect, healthy snack. I especially love that they are plant-based sources of healthy fats and sugars for long-lasting energy. Can't go wrong with that in my opinion!

3 Ingredient Reese's Energy Bites
Equipment
Ingredients
- 1 ½ cups peanuts
- 1 ½ cup pitted dates
- 2 tablespoons cacao powder
- 2 tablespoons water
Instructions
- Place the first three ingredients (peanuts, dates, cacao powder) into a food processor and process until a sticky dough forms. Add in the water if necessary.
- Roll the dough into 1 inch balls.
- Store in an airtight container in the fridge.

So simple yet I bet they're so tasty! I just had a peanut butter cookie larabar today which has dates, peanuts, and salt. I've been meaning to make my own since I haven't made energy bites in a long time! LOVE the Reese's style of these! Those were always my favorite 🙂

Exactly...simple yet delicious. These are practically the same thing as a larabar, I'm just lazy and roll them into balls:) It's amazing how two/three ingredients can be so delicious!
