For the last couple months I've been eating the "same old, same old" breakfast: oats cooked with ground flaxseed, chia seeds and berries, topped with nut butter. It fills me up, tastes delicious, and I can make it without thinking.
This past week though, things have changed. I've had smoothies, english muffins, cereal and even cornbread for my first meal of the day! So while I know this isn't a typical "What I Ate Wednesday" post, I wanted to share some of breakfast creations I've enjoyed this past week. If you too are in a breakfast rut, I hope this post can give you some inspiration!
Green Smoothie Bowl with Oats, Plain Shredded Wheat and Cacao Nibs
Green Smoothie with Spirulina
Leftover Cornbread topped with Mixed Nut Butter
Homemade Bran Flakes with Homemade Oat Milk
Whole Wheat Cinnamon Raisin English Muffin
Chocolate Oatmeal topped with Cacao Nibs, Craisins and Almonds

That picture of the homemade bran flakes looks professional!! Can't wait for that recipe! The other day I had the weirdest craving for cinnamon toast crunch and I want to make a healthified version! My breakfast is the same as yours - oats and nutbutter! It never gets old! I'll have that during the week then on the weekends I love my pancakes 🙂

Thanks Leigha! That pic I took with our new camera so hopefully there will be more like that:) Oooo cinnamon toast crunch...I'm inspired! And pancakes are always perfect for the weekends!

A smoothie bowl?? That's a great idea! I'm going to have to try the chocolate oatmeal - do you have a recipe for that?
Faith says
I'm glad I found about about smoothie bowls too! As for the chocolate oats, I have an old recipe on my blog (way towards the end of the oatmeal section). Basically I just whip in 1 ripe, sliced banana into my oats when they're almost done cooking and then add in 1 T cocoa powder. The banana sweetens the oats and the cocoa gives it the chocolate flavor...obviously:) Try it!
