The kitchen appliance that I've been dreaming about owning for years is finally sitting on my kitchen counter...a Vitamix! I would have registered for one when Brett and I got married, but we knew we'd be moving to China in a couple years and that we'd need to have a blender that worked on 240V. So we held off and it was worth the wait. That machine is a beast!! In fact, I still get a little scared whever I use it. It's so loud and powerful that I keep thinking I'm working it too hard, even if I'm just blending up some fruit. Eventually, I'm hoping my heart won't pound every time I turn it on.
Our Vitamix was from the UK so it has a different plug than one from America. We forgot to order an adaptor for it before we moved and it took us a while to track one down here in China. Walmart to the rescue! So far I've made a marinara sauce, vanilla cashew butter and this Chocolate Green Smoothie. It's so nice to not have bits of spinach in my teeth after I drink a green smoothie and I love that it completely grinds up smaller add-ins like chia seeds.
I took the pictures for this post at Brett's parent's house before we moved. It was fun to have different kitchenware to use as props in my pictures. I was also able to take most of my pictures outside on their back porch which I loved. I'm sure the neighbors thought I was odd!
This smoothie is full of plant-based goodness and it's sweet enough to temp any skeptic. If you want a more subtle green flavor, I would highly recommend using spinach, as its sweeter than other greens. In addition to frozen bananas, dates pump up the yum factor and make you think you're eating dessert for breakfast. Yes please!

Chocolate Green Smoothie
Equipment
Ingredients
- 2 frozen bananas
- 2 pitted medjool dates
- 2 handfuls of spinach
- 1 tablespoon cacao powder
- ½ cup liquid water or non-dairy milk
Instructions
- Place all of the ingredients into your blender and blend until smooth.
- Enjoy immediately!

I love my Vitamix for smoothies and soups. It is great how it just pulverizes the spinach or greens and there are no chunks left. The two things I have not figured out how to make are nut butters and hummus. Both have stuck to the bottom and not really blended well. Hope you will share your butter recipe one day!...please 😉

I've still yet to try out a soup, but I'm pretty sure I will soon!! And I'll definitely be sharing the vanilla cashew butter recipe. It freaked me out to make it though...that machine is so powerful and loud I always think the blade is going to break:) But it worked!

Oh wow, the vanilla cashew butter you made in your Vitamix sounds delicious. I've heard such great things about the Vitamix and would love to get one some day. For now, I just add the spinach to the liquid in my blender first and blend it really well before adding the other ingredients (so basically I make spinach almond milk first haha) because chunks of spinach in my smoothie = no bueno.
