Growing up in America means I'm a s'more lover.
Whenever we would go camping (which was often) we were allowed to make s'mores as our after-dinner-dessert.
Even as an adult I still love s'mores and have one whenever I get the chance.

Today, I'm sharing a super easy way to enjoy your favorite dessert without the fire with these Easy Vegan S'mores Bars!

Ingredients You'll Need for Vegan S'mores Bars
These vegan s'mores bars require less than 10 ingredients and are super easy to prepare.
I love involving my daughter whenever I make these because the recipe is so easy!
To make these s'mores bars, you'll need the following ingredients:
- Vegan butter
- Brown sugar
- Aquafaba
- Salt
- Baking powder
- Flour
- Graham crackers
- Dairy-free Chocolate chips
- Vegan marshmallows
Just FYI, aquafaba is the liquid from a can of chickpeas.
It sounds like a strange ingredient to use, but its acting as an egg in this recipe!
Are Marshmallows Vegan?
You might be wondering why I specified that you'll need vegan marshmallows to make these s'mores bars.
Well, traditional marshmallows aren't vegan!
Marshmallows aren't vegan because they contain gelatin.
Gelatin is an animal protein that is made from the skin, tendons, and ligaments of animals such as cows and pigs.
Which Brands of Marshmallows are Vegan?
So if you're hoping to make completely vegan s'mores bars, you'll need to use honey-free graham crackers, dairy-free chocolate chips AND vegan marshmallows.
Thankfully there are quite a few brands of vegan marshmallows on the market now, so you shouldn't have any issues finding some to use in this recipe.
Some of my favorite vegan marshmallows are:

- Yummallo Vegan Marshmallows
- Trader Joe's Marshmallows
Yummallo Vegan Marshmallows can be found at walmart or you can try ordering some of these vegan marshmallow online!
How to Make Vegan S'mores Bars
This recipe really does come together in about 10 minutes.
Then your oven does the rest of the work!
Let me walk you through how to make them with the following step-by-step instructions and photos.
- Preheat your oven to 350F and line a 9x9 inch baking pan with parchment paper. Set it aside.
- In a large mixing bowl, stir the melted vegan butter and brown sugar together until smooth. Whisk in the aquafaba, salt and baking powder. Lastly, gently stir in the all-purpose flour and crushed graham crackers until a dough forms.
- Press ⅔ of the dough into the bottom of your lined baking pan. It might not seem like enough, but it will stretch!
- Next, sprinkle mini vegan marshmallows and dairy-free chocolate chips all over the base of your bars.
- Break up the remaining ⅓ of the dough and sprinkle it over top of the marshmallows and chocolate, pressing it down slightly.
- Bake the bars for 20-25 minutes or until golden brown on top and the marshmallows peeking through the crust are beginning to turn golden brown.
- Allow the bars to cool completely before cutting them into squares.
How to Store Leftover Vegan S'mores Bars
These bars will keep for a couple of days in an airtight container at room temperature.
That means they're ready to enjoy whenever your s'more cravings hit!
