    Vegan Chili Loaded Sweet Potato Fries

    Well that was a long trip home!

    Brett and I left America last Tuesday and just got back to China four days later on Saturday after 4 flights, 2 days galavanting around Switzerland, and lots of unnecessary hassle in a few of the airports. 

    Yeah, we looked pretty rough when we walked through the door of our apartment in China. But our time in America with family and friends was SO worth the long and draining hours of travel that it took to get there and back. I'll be sharing more about our time in America and Switzerland later on in the week so stay tuned for that!

    As always after lots of travel, I'm so happy to be back in my kitchen cooking my own food and creating new recipes. I'll be sharing a blog post on tips for maintaining a blog while traveling a little bit later, but one major tip I've found that works for me is to keep a list of recipes you want to create on your phone or in a notebook. Just because I'm traveling doesn't mean that I'm not thinking of recipes. I'm almost always thinking up recipes! Having a list that I can add ideas too is such a lifesaver. Then when I come home from a long trip, I don't have to quickly come up with new recipe ideas, but instead I can just choose a recipe off my list and get started right away.

    I'm really excited about the new recipes I'll be creating in the near future, but for today I'm going to share with you a simple way to jazz up the Oil Free Baked Sweet Potato Fries I showed you how to make the other day.

    I'm all about condiments when in comes to fries, but why not take some simple fries to the next level by topping them with spicy homemade chili, nutritional yeast, cilantro and avocado? Chili usually intimidates me as I always think it will take forever to make, but in the time it takes your Oil Free Baked Sweet Potato Fries to cook, your chili will be ready and you can pile it on your warm and crispy fries and dig in!

    This meal is so hearty and flavorful and easily adaptable. Use your favorite beans or even swap out some of the vegetables. Heck, use some canned chili if you want! Jazz this meal up with some awesome condiments too such as Sriracha, nutritional yeast, vegan sour cream, avocado, cilantro or even some vegan cheddar cheese!

    Ingredients
     
     

    FRIES

    • 4 sweet potatoes medium, 1 per person
    • chili powder
    • cumin
    • salt and pepper

    CHILI

    • 1 red onion chopped
    • 3 cloves garlic minced
    • 1 cup carrots chopped
    • 1 red bell pepper chopped
    • 2 tablespoon chili powder
    • 1 tablespoon cumin
    • 28 ounce can chopped tomatoes
    • 2 15 ounce can beans kidney and black
    • ½ teaspoon salt (add more to taste)

    TOPPINGS

    • Avocado
    • Nutritional yeast
    • Cilantro
    • Vegan Sour Cream
    • Vegan Cheese

    Instructions 

    • In a large pot, sautee the onion, garlic, carrots and bell pepper in water until the onions are translucent, about 5-10 minutes.
    • Add in the spices, tomatoes, beans and salt and allow everything to simmer for 10-15 minutes until the flavors have melded and the beans are heated through.
    • Serve over Oil Free Baked Sweet Potato Fries and top with optional toppings!

      One of my all-time favourite meals! I usually have oil-free white potatoes but absolutely adore sweet potato too. Never thought to add vegan sour cream though, yum! Pinned 🙂

      What a delicious fry feast, I want to dive right in fingers first! Loaded fries was always one of my favorite appetizers, but when it's healthy enough to be called the meal that is even better! I'm looking forward to your blogging while traveling post, because that is something I find really challenging.

      These are one of our favorites! Luckily the last time I whipped them up I made a double batch of chili and frozen some, these might have to be dinner tonight!
