As you read this post, Brett and I will be carving our way through the snow on snowboards....well, I hope so. It may be more like sliding down on our bums, but who knows!
Brett and I have been wanting to go snowboarding together ever since we got married. Living in Florida made that goal a little bit more difficult, but when we moved to New York we knew we needed to make it happen. I haven't snowboarded in years and Brett has never snowboarded in his life so it's going to be quite an adventure! I'm hoping I'll be able to pick up back up quickly and that Brett will enjoy his first time. It seems like the first day of snowboarding for most people can be frustrating and painful, so I'm praying Brett's athleticism will make his first time easier.
I feel like every time in the past that I've gone snowboarding, someone in my group has gotten hurt. I'm talking broken bones/concussions/torn ligaments kinda hurt. In fact, our good friend here in New York tore her ACL just a couple months ago skiing.
Gulp.
Thank goodness it's a tiny mountain and that we're not taking our chances at Vail!
I'll let you know how the whole snowboarding thing goes in my next post. Until then, enjoy the recipe for these delicious, Vegan Morning Glory Muffins! If you've been reading along, then you'll know I'm on a sneak-veggies-into-everything kick. And guess what?! I did it with these muffins too! Plus there's tons of other delicious goodies in these like apple, walnuts and raisins. Yum!
I'm still at the point where I'm never sure if the recipes I experiment with are good or not. I typically think everything tastes good, but I'm learning to have more of a critical mindset when it comes to recipe testing. I wasn't too sure about these muffins, but when Brett ate one and exclaimed, "Oh man, these are good!" I knew that they were post worthy:)

Vegan Morning Glory Muffins
Ingredients
- 1 ¼ cup oat flour
- 1 cup whole wheat flour
- 1 cup grated carrots
- 1 small apple grated
- ½ cup raisins
- ½ cup walnuts chopped
- 1 tablespoon cinnamon
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 flax egg 1 tablespoon ground flaxseed + 3 tablespoons water
- ½ cup coconut oil melted
- ½ cup unsweetened applesauce
- ½ cup mashed ripe banana about 1 large
- ⅓ cup maple syrup or honey if not strictly vegan
- ¼ cup almond milk
Instructions
- Preheat your oven to [wprm-temperature value=375 unit=F] and line your muffin tin with silicone muffin liners or spray your tin with non-stick cooking spray. Set aside.
- Prepare your flax egg by whisking 1 tablespoon of ground flaxseed with 3 tablespoons of water in a small bowl. Set it aside to gel for about 5 minutes.
- In a large bowl mix together mix together the first 9 ingredients, from oat flour to salt. In a separate bowl whisk together all of the wet ingredients, from your flax egg to almond milk.
- Pour the wet ingredients into the dry ingredients and mix until just combined. It's okay if there are some streaks of flour still. Evenly divid the batter among 12 muffin tins.
- Bake for 22-25 minutes or until a toothpick inserted into the center comes out clean

Can you use chia instead of flax to make the egg sub? Chia seeds instead?
Also, didn't know if you could just use whole wheat flour instead of the oat flour?

I haven't tried it yet, but I'm sure it would work just as well! And you should also be able to swap the oat flour for whole wheat flour, you just might have to add more liquid to compensate. I hope they work out for you Jenn!

Morning glory muffins have always sounded awesome and so healthy and I've wanted to make them in the past, but all the recipes I've found have been loaded with oil. I haven't gotten the chance to experiment with lightening them up yet, so these look amazing!

Yum, these look good! Have fun snowboarding - I hope it goes well!! Whit and I were all set to go on Friday but it ended up being way too cold. Not trying to get frostbite, you know! Hopefully we can find another day that works soon!

These look awesome!! I've been wanting to bake something and I might try these out. I bet the oat flour gives them a great taste! And I bet they'd be even better with a little almond butter spread on to them 😀

It was a great day Leigha...although a bit nippy:) I can so relate to your story. I'm scared to water tub now from an injury when I was younger. Such a bummer when things we love become less enjoyable because of accidents. And you're so right about the almond butter! That's exactly how I ate these muffins most of the time!
