Ingredients You'll Need for Vegan Ramen Noodles
Not only is this ramen noodle recipe super quick to prepare, it also doesn't require a ton of ingredients.
The sauce may have some ingredients that you don't yet have on hand, but I'm sure one you get them in your pantry, you'll use them all the time.
Let me tell you what you'll need for this recipe.
Ramen Noodle Sauce Ingredients:

- Oil (a neutral oil as well as sesame oil)
- Onion
- Garlic
- Protein source (I like vegan beef or tempeh)
- Water
- Ramen noodles (seasoning packet discarded)
- Optional garnishes

Are Ramen Noodles Vegan?
Yes! Most ramen noodles are vegan!
Ramen noodle packets usually contain a seasoning packet and those aren't always vegan. However, the noodles themselves are usually just made from wheat flour, oil and a few other ingredients.
I personally like when I'm able to find whole grain ramen noodles, but when I'm in a pinch, any type of ramen noodle should work for this recipe.
Just don't forget to discard the seasoning packet!
How to Make Quick Asian Ramen Noodles
To make this quick and easy (not to mention One-Pot!) Asian Ramen Noodle Recipe, simply follow the step-by-step instructions below.
- Step 1. Mix together the sauce ingredients. Set them aside.
- Step 2. Heat the oil in a large wok (or saucepan) over high heat. Add in the sliced onion and garlic and cook for about 1 ½ minutes or until golden.
- Step 3. Add in the ground "beef" or tempeh and sauté until browned. If using vegan ground beef, use a wooden spoon to break up the meat as you go.
- Step 4. Pour over the sauce, stir and allow it to cook for about 2-3 minutes until the onions and "beef" start to caramelize.
- Step 5. Push the onions and "beef" to the sides of the wok and pour in the water and press in the ramen noodles. Allow the noodles to cook for about 1 minute on one side before flipping them over to cook another 30-45 seconds on the other side. Separate the noodles once soft and stir everything well to combine.
- Step 6. Divide the noodles between bowls, top with roasted veggies (if using), optional garnishes and dig in!
How to Reheat Leftover Ramen Noodles
Leftover ramen noodles have the tendency to dry out after they sit in the fridge for a while.
My favorite way to freshen up leftover noodles is to add a splash of vegetable broth to them and then microwave them until hot. The vegetable broth helps rehydrate them and makes them like new!

A few extra toppings can take simple noodles from "meh" to amazing!

Quick Asian Ramen Noodles
Ingredients
SAUCE
- ¼ cup reduced sodium soy sauce or Tamari if GF
- ¼ cup vegetarian oyster sauce
- 3 tablespoons hoisin sauce
- ¼ cup mirin
NOODLES
- 2 teaspoon oil
- 4 teaspoon sesame oil
- 4 cloves garlic minced
- 1 onion sliced
- 12 ounces vegan ground "beef" OR 1 ½ blocks tempeh, sliced
- 2 ½ cups water
- 4 packets ramen noodles seasoning packets discarded*
- Optional garnish: green onions,sesame seeds, red pepper flakes
