    Vegan Apple Pie Oatmeal Bars

    With a buttery, oatmeal base, tart green apple filling and sweet crumble topping, these Vegan Apple Pie Oatmeal Bars are going to be your go-to dessert this fall season!

    Fall is here which means I want to make ALL the apple desserts!

    However, I also don't want to spend a long time in the kitchen, so I want EASY apple desserts.

    Lately we've been loving these Easy Vegan Apple Turnovers and this healthy and easy Vegan Apple Crisp!

    You can never have too many delicious apple desserts, however, so today I'm adding another recipe to the blog's repertoire with these Vegan Apple Pie Oatmeal Bars!

    With a buttery, oatmeal base, tart green apple filling and sweet crumble topping, I know you guys will love them! In the warmer months, I make a similar vegan oatmeal bar recipe filled with strawberry jam that you all might enjoy as well!

    Ingredients You'll Need for Vegan Apple Pie Bars

    While these apple pie bars have three layers, they really don't require too many ingredients.

    In fact, they only require 10 ingredients, many of which you probably already have on hand!

    I'll list out everything you'll need below:

    • Flour
    • Quick oats
    • Cinnamon
    • Baking powder
    • Salt
    • Vegan butter
    • Maple syrup
    • Granny smith apples
    • Brown sugar
    • Pecans

    How to Make Vegan Apple Pie Oatmeal Bars

    These bars have three layers:

    • a buttery, oatmeal base
    • a tart, green apple filling and
    • a sweet and crunchy topping

    Follow these simple step-by-step instructions and you'll be enjoying a warm apple pie bar in no time!

    1. Preheat your oven to 350F and line a 9x9 inch baking dish with parchment paper. Set it aside.
    2. In a large mixing bowl, stir together the dry ingredients for the base of the bars, including flour, quick oats, baking powder, cinnamon and salt. Next add in the melted vegan butter and maple syrup and stir everything well until a wet dough forms. Press the dough into your lined baking dish and set it aside.
    3. To prepare the apple filling, thinly slice two large green apples and place them in a mixing bowl. Sprinkle over the flour, brown sugar and cinnamon and stir well until the apples have been well coated with the flour mixture. Set the apples aside while you prepare the crumb topping.
    4. In another mixing bowl, stir together chopped pecans, flour, brown sugar and cinnamon until combined. Add in your solid, vegan butter and using your hands or a spoon, cut the butter into the dry mixture until a batter like wet sand forms. Set it aside.
    5. Now that you have all your components made, pour the sliced green apples onto the oatmeal base. Use your hands to spread them out into an even, compact layer.
    6. Next, break up the wet, crumb topping as you sprinkle it overtop of the apples. Gently press the mixture down to get it to stick to the apples.
    7. Bake the bars for 40 minutes or until set and golden brown on top.
    8. Allow them to cool completely before using the parchment paper to carefully remove them from the pan and cut them into bars.

    How to Store Leftover Apple Pie Bars

    If you happen to have leftovers of these apple pie oatmeal bars, don't worry! These bars store beautifully in the fridge for up to a week.

    I personally like to cut them into serving-size squares and place them in a sealable tupperware container.

    When I want to enjoy one, I love to heat it up in the microwave for a few seconds until nice and warm.

    OATMEAL BASE

    • 1 ¼ cup quick cooking oats
    • 1 ¼ cup flour
    • 1 teaspoon cinnamon
    • ½ teaspoon baking powder
    • ¼ teaspoon salt
    • ⅔ cup vegan butter melted
    • ¼ cup maple syrup

    APPLE FILLING

    • 2 granny smith apples thinly sliced
    • 2 tablespoon flour
    • 2 tablespoons brown sugar
    • 1 teaspoon cinnamon

    CRUMB TOPPING

    • ½ cup pecans chopped
    • ¼ cup all-purpose flour
    • ⅓ cup brown sugar
    • 1 teaspoon ground cinnamon
    • 3 tablespoons vegan butter solid

    Instructions
