We're finally all sleeping through the night around here and it's glorious. About a week ago Harper started sleeping through the night (thanks to Brett's sister's swaddling skills) and she hasn't looked back. I'm finally starting to feel normal now and I don't dread nighttime like I used to, because I know I'll get a full night of sleep.
But no matter how much sleep I get, since having Harper my breakfasts have gotten simpler and simpler. I used to put a lot more time into adding fun toppings to my oatmeal or creating new-to-me recipes in the mornings. Nowadays I wake up super hungry (#brestfeedingproblems) and I have a limited amount of time to prepare my food. I'm pretty sure I've eaten microwaved chocolate zoats for 3 weeks straight!
In hopes of switching up my breakfast without adding more time to the preparation, I recently decided to make a batch of overnight oats...Vegan Golden Milk Overnight Oats to be precise! If you've never had golden milk, you need to get on it. It's basically sweet, warm milk with lots of warming spices mixed in...so yummy! I thought Golden Milk would make the perfect base for some overnight oats and I was right. I used ground turmeric, ginger and cinnamon to create the warm, golden flavor and then used non-dairy milk and yogurt to give these overnight oats the creamiest texture ever. Lastly, a smidgen of maple syrup provided the sweetness.

I absolutely loved waking up to these Vegan Golden Milk Overnight Oats. I topped mine with fresh blueberries, coconut flakes and granola and then later added a blob of nut butter, because I can't get enough nut butter these days.

Vegan Golden Milk Overnight Oats
Ingredients
- ½ cup rolled oats
- 1 tablespoon chia seeds
- ¼ teaspoon ground turmeric
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground ginger
- Pinch salt
- Pinch black pepper
- ⅓ cup unsweetened plain non-dairy yogurt
- ½ cup non-dairy milk*
- 2 teaspoons maple syrup
Instructions
- In a bowl, mix together the dry ingredients--from the oats to the black pepper--until combined.
- Add in the non-diary yogurt, milk and maple syrup and mix well.
- Place the mixture in the fridge for 4 hours or overnight.
- In the morning, add on whatever toppings you desire and enjoy!

Just put some golden milk overnight oats in the fridge for tomorrow. Can’t wait to try them. I am in China so didn’t have the yogurt. I just upped the plant milk to 3/4 cup.
