Fall is hereeeeee!!!
Well, I’m currently writing this post from Thailand where fall is nowhere in sight, but fall has definitely arrived in China. I’m sure so many of you are starting to experience cooler weather where you live and are getting excited for the holiday season to begin. I’m looking forward to getting back to China, wearing warmer clothes and drinking hot tea all day long.
I’d don’t know about you, but I’m the kind of person who adds pumpkin puree to my meals all year long. It’s an amazing ingredient that adds lots of nutritional benefits to my meals, so I almost always have some Homemade Pumpkin Puree in my fridge no matter what season it is. Now, make sure you don’t confuse pumpkin puree with pumpkin pie mix/filling. Pumpkin pie filling has lots of added sweeteners in it, while 100% pure pumpkin puree is, well, just pumpkin puree. Pumpkin Puree is low in calories while being high in fiber, Vitamin A and iron. I love to add pumpkin puree into my (or Harper’s!) oatmeal for a more filling, nutritious breakfast.
In addition to pumpkin puree being really good for you, it’s also delicious when used correctly. I love using it in both sweet and savory recipes and I hope the 20 vegan pumpkin recipes listed below give you some inspiration for how to incorporate it into your meals this fall season!
