    Before I get to this Easy Dairy Free Iced Mocha Recipe, I wanna share about why I've been drinking so many iced beverages in the first place. As in one a day without fail.

    Adjusting to life back in America after our whirlwind trip to and from China has been easy in some senses and hard in others.

    It was an easy adjustment in the fact that we were only in China for two days, so I barely had time to get settled and feel like we were officially back. Returning so quickly to my sister-in-law's house made it seem like we had just left for a weekend getaway...which in a sense we had. It just happened to be a weekend getaway to China!

    The harder part has been adjusting to so much free time. Our life is in China and living overseas brings about daily adventures and business. Everyday in China kept us on our toes and kept our brains on edge as we tried to maneuver such a unique culture and language. Errands took hours and were a workout in themselves. Meals were often cooked from scratch. Rest often didn't grace us with its presence until we were in for the night getting ready for bed. Basically life in China was fast-paced...just how I like it. 

    Our life currently in America, on the other hand--mainly because we weren't expecting to be in America for this long--is extremely slow-paced and full of free time. I don't think I've ever had this much free time in my life. It's like a vacation that's on the verge of being too long.

    While being a mother to a newborn definitely fills up a ton of my time, I'm still not comfortable with my days being so fluid. I function better when I have structure and events to go to during the day, because they force me to use my time better when I do have free time. Now, I'm having to figure out how to manage long stretches of time when I don't have to go anywhere or technically do anything. Also, being away from China makes reviewing and studying Chinese less motivating. Hopefully I'll be able to sign up to speak with some Chinese people on-line for a fun, more interactive, scheduled way to continue my Chinese studies.

    Anyways. Iced beverages.

    Since my days are usually wide open, one thing I've been trying to do more is read. And not just read, but read outside while Harper baby enjoys the fresh air. I've been placing one of my sister-in-law's pool floats in the shade, placing a blanket and some toys on it for Harper, and making an iced beverage to enjoy while we sit by the pool and bask in the Houston warmth. I've been rotating between Cold Brew Iced Coffee, Dairy-Free Matcha Lattes and this Easy Dairy Free Iced Mocha. All of these drinks are so easy to make (remember, I'm a mama to a newborn) and they are so refreshing, especially as the days get increasingly warmer here in Houston. 

    I love this Easy Dairy Free Iced Mocha because, while rich and chocolatey, it's also light and refreshing. I just blend up the ingredients in a blender or by using a immersion blender and then pour the mixture over ice. 

    Bada bing bada boom.

    Equipment

    • Vitamix 5200 Blender

    Ingredients
     
     

    • 1 cup cold brew coffee
    • ½ cup non-dairy milk
    • 2 teaspoons cocoa powder
    • 2 teaspoons maple syrup or to taste
    • handful of ice

    Instructions 

    • In a blender or using an immersion blender, blend all the ingredients, except for the ice, together until smooth and frothy.
    • Pour over ice and enjoy!

    Notes

    Enjoy this with biscotti or scones for a breakfast treat.
