Life Update
When you read this post I will be in Tokyo!
Brett and I and one of our friends got to spend two days in Tokyo last fall, but Brett and I have some incredible friends who recently moved to the army base in Tokyo and offered to fly us out for a restful week. What the?! The amount of generosity they've shown us over the years is unbelievable. I just hope our presence at their house will be a blessing to them as well. But I really am looking forward to our time there. They want us to prioritize rest and after a full week of intense sickness and hosting a lot of friends lately, rest is just what I need. I'm hoping to read a lot, spend quality time with Brett and our friends, exercise when it feels good and just take a break.
After we get back from Tokyo we only have 2 ½ weeks of class and life in China until we head to America! I still can't believe it's actually happening and that I'll get to see most of my family and all of Brett's family very, very soon. We'll be flying into Texas and will be hopping from Austin, to Dallas to Houston to see friends and Brett's family before flying to Denver to spend a week with my family and attend my cousins wedding. I still can't believe that I haven't see my parents in almost 2 years and that I'll be with them in about a month.
AND...did I mention that my sister had her third girl just over a week ago?! Eliza Lane and I cannot wait to snuggle that little bundle of joy.
Okay. I'm totally rambling out of excitement. I'm just am so thankful that I'll be able to see my family this summer and go to America. I'm so ready.
The Story Behind This Date Chocolate Sauce
What I'm also so excited about is this Date-Sweetened Chocolate Sauce. The idea for this recipe actually came from two of my friends who, a while back, wanted to cook me a vegan dessert and came up with an amazing chocolate sauce by throwing a bunch of random stuff in my blender. I knew I would be recreating it asap after I tasted it because it was so delicious. I ended up with this simplified version which I'm obsessed with. I put it on everything! Cereal, sweet potatoes, toast, banana ice cream, etc.

Date Sweetened Chocolate Sauce
Equipment
Ingredients
- 1 cup soy milk
- ½ cup pitted dates
- 2 tablespoons cocoa powder
- Pinch of sea salt
Instructions
- In a small sauce pan, warm up the soy milk and pitted dates until the milk is hot and the dates are softened.
- Pour the milk and softened dates into a blender and add in the cocoa powder and pinch of salt.
- Blend until smooth.
- Pour the chocolate sauce into a jar and refrigerate until cool and thickened.
- Serve on top of pancakes, ice cream, etc.!

It's my newest obsession! I love it on everything:) Tokyo has been so so restful and just what I needed. We're staying at an army base and they have a running track around the base that you would love. It's so nice to have grass to run beside and to not get stared at:) and yes, I cannot wait to go to America and see my family! I'm so thankful it's happening!

Great recipe. Can you use any other milks such as almond, coconut, etc.?

Yes definitely Sharon. Just note that a milk like coconut milk would give the sauce a more coconut-y flavor:) I hope it works out for you!

You're coming to Denver? :))) I live close to Denver. And this sauce looks so creamy and so perfect for any sweet dish. It would go so well with ice cream, oatmeal, or just straight out of the jar.
