    Easy Savory Chickpea Flour Crepes

    These Savory Chickpea Flour Crepes are super easy to make and pair perfectly with a variety of sautéed veggies and greens. Top them off with runny tahini and fresh herbs and you'll have a nutrition, flavor-packed meal!

    Crepes of any kind are amazing, but these savory crepes stuffed with creamy hummus and sautéed mushrooms are especially amazing!

    I know the thought of chickpea flour crepes might weird you out, but chickpea flour is personally one of my favorite flours to cook with!

    It creates delicious savory breakfasts like today's Chickpea Flour Crepes and my Savory Chickpea Flour Falafel Pancakes.

    But it also is the base for some of my favorite sweet recipes like this amazing Chickpea Flour Banana Bread and these Healthy Chocolate Chickpea Flour Pancakes.

    So don't let chickpea flour intimidate you!

    Let me show you how to use it to make these incredibly easy Savory Chickpea Flour Crepes!

    Ingredients You'll Need for Chickpea Flour Crepes

    As you can guess, the main ingredient you'll need for chickpea flour crepes is in fact Chickpea Flour!

    The only other mandatory ingredient you'll need it water, but I personally love to add a few other ingredients to take these crepes to the next level.

    I'll list out all of the ingredients you'll need below:

    • Chickpea flour
    • Water
    • Nutritional yeast
    • Lemon juice
    • Salt
    • Black pepper

    As you can see, the ingredient list for these chickpea flour crepes is super short!

    What is Chickpea Flour?

    Chickpea flour may sound like a weird, hard-to-find ingredient, but once you learn about it, you'll want to use it all the time.

    Chickpea flour is basically chickpeas that have been ground down into a flour.

    There are a few different names for chickpea flour, including garam flour, besan flour and garbanzo bean flour, so keep that in mind when you're looking to purchase a bag.

    Chickpea flour is a good source of fiber, protein and iron.

    It's also gluten-free!

    How to Make Chickpea Flour Crepes

    Chickpea flour crepes are easy to make, requiring just two ingredients (plus more if desired!) and a little bit of hands-on-time.

    To make chickpea flour crepes, simply follow the step-by-step instructions below!

    • Step 1: In a mixing bowl, whisk together all of the ingredients until smooth. Set the mixture aside for about 5 minutes.
    • Step 2: Heat a non-stick skillet over medium heat and spray the pan with cooking spray.Using a ladle, pour some of the batter into the middle of the hot skillet and tilt the pan in a circular motion to spread the batter out into a thin, round crepe. Allow the crepe to cook on one side for about 1-2 minutes before carefully flipping it over to cook on the other side. You'll know the crepe is ready to flip when it doesn't rip when you lift up one of the edges and the underneath is golden brown and set.
    • Step 3: Remove the cooked crepe to a plate and continue this process until you've used up all of the batter.
    • Step 4: Fill the crepes with hummus, sautéed mushrooms and greens. Then roll them up and top them off with runny tahini, tomatoes and fresh herbs...or whatever your heart desires!

    Savory Crepe Fillings and Toppings

    Get creative with your fillings and toppings!

    Obviously, if you make these crepes with the salt and pepper, nutritional yeast and lemon juice, they will be savory. Therefore, savory fillings would be best.

    How to Store Leftover Chickpea Flour Crepes

    These crepes taste best when enjoyed warm right off the pan, but you can save any leftovers you may have.

    To store the leftovers, simply place the crepes in a zip-lock bag and store them in the fridge for up to 2 days. They will stiffen up the longer the sit in the fridge, so just warm them up in the microwave or on a skillet before filling them with your favorite ingredients and digging in!

    Ingredients
     
     

    • 1 cup chickpea flour
    • 1 cup water
    • 1 tablespoon nutritional yeast
    • ½ teaspoon salt
    • juice of ½ small lemon
    • black pepper

    Optional Fillings

    • hummus
    • sautéed mushrooms
    • sautéed greens
    • sun-dried tomatoes
    • olives

    Instructions 

    • In a mixing bowl, whisk together all of the ingredients until smooth. Set the mixture aside for about 5 minutes.

      This recipe didn’t work at all. Equal parts flour and water didn’t make a batter, just a paste, so I had to use much more water. No matter what I tried the batter sticks to the pan and doesn’t lift up in one piece at all. I’m not experienced with chickpea flour but I don’t see how this could ever work, definitely not easy! I wish I knew the secret.
