Where my breakfast lovers at?! I’ve always been the person who thinks about what I’m going to eat the next morning for breakfast as I lay in bed at night. The thought of skipping breakfast is so crazy to me and I’m not even sure I’ve ever allowed it to happen. There’s no way I’m going to pass up the best meal of the day!
For the past year plus, I’ve been obsessed with my chocolate zoats. I don’t know when my obsession officially started, but most mornings I rarely strayed from my voluminous, veggie-filled bowl of goodness…until recently. Since getting to Thailand I’ve really wanted to challenge myself to switch up my breakfast. One reason is that I want to vary the nutrients I consume throughout a week. Another reason is that I know there are so many amazing breakfast combinations out there that I’m missing out on simply because I’m stuck in a rut. So for the past couple of months I’ve been broadening my horizons and stepping out of my chocolate-zoats-box. While it doesn’t happen everyday and many of my breakfasts are still oatmeal-based, I’ve been amazed at how much I’ve switched things up over the last couple months.
I’ve been documenting the different breakfast I created and thought I could put them all together in one, massive, breakfast-lovers post to hopefully inspire you all to try something new!
I’ll link to any specific recipes when needed, but otherwise all these breakfasts are fairly simple and don’t require a recipe. 2 Ingredient Oatmeal Banana Pancakes with peanut butter, homemade strawberry chia jam and banana
Almond milk soaked muesli with weet-bix, homemade coconut yogurt, strawberry chia jam and banana
Sweet toast of peanut butter, jelly and pumpkin seeds + savory toast of vegan muenster cheese, chickpea and sesame seeds
Cheesy Vegan Tofu Scramble with toast and fruit. One slice of toast was topped with hummus and salsa and the other had vegemite, vegan muenster cheese and sesame seeds
Thick slices of Walnut Raisin Bread smeared with vegan butter
Berry Baked Oatmeal (an old, but amazing recipe!) topped with strawberry chia jam and peanut butter
Cakey zucchini bread oatmeal topped with almond butter and strawberry chia jam
Rice porridge (made by cooking leftover rice, raisins, ground flaxseed, chia seeds and cinnamon in almond milk until thick and creamy) topped with peanut butter, banana, pumpkin seeds and walnuts
Chocolate green smoothie bowl (banana, spinach, zucchini, cocoa powder, almond milk) topped with muesli, coconut chips, strawberries and chia seeds
Sweet and Savory Toast: 1.) black tahini, banana and pumpkin seeds, 2.) vegan muenster cheese and tomato, and 3.) roasted tomato hummus, white beans and vegan parmesan
Chocolate Quinoa Cluster Granola, “Cherrios,” banana and almond milk
Muesli with almond milk, banana, strawberry chia jam, homemade coconut yogurt and fun crunchy toppings like coconut chips and pumpkin seeds
Pumpkin oatmeal topped with peanut butter, pumpkin seeds, desiccated coconut and date syrup
Brownie Batter Baked Oatmeal with banana and pumpkin seeds
Coconut yogurt bowl with muesli, fresh and dried fruit, nuts and seeds
Strawberry oatmeal (oats cooked with frozen strawberries) topped with peanut butter nuts and seeds
